Mint Chocolate Chip Ice Cream

1c Cashews, soaked 4+ hours
2 Avocados
1c Coconut Water
Handful of fresh Mint
1/2c Honey
1Tbs Vanilla Extract
2Tbs Raw Cacao Nibs (or Chocolate Chips)

Blend the Cashews and the Coconut Water til it looks like butter. Add the Avocados Honey and Vanilla. Blend til creamy. Add the Mint and blend for just a few seconds longer. Pour into ice cream maker or bowl for the freezer.

Drop the Cacao nibs in just before done in your ice cream maker.

Process in maker or by hand. Place in freezer to firm up for a few hours.
To process Ice Cream by hand you place in freezer for 30 minutes then break up with a fork or whisk. Repeat until frozen!
